  •  Preheat your oven to 350° F (175° C) and prepare an 8×8 inch baking dish. You can either spray it thoroughly with non-stick baking spray or, for easier removal, line it with parchment paper, leaving an overhang on the sides.
  • In a medium-sized mixing bowl, combine the 1 cup of melted unsalted butter with 1 cup of brown sugar. Mix these two together vigorously with a spatula or a wooden spoon until the mixture is light and fluffy. Next, add in the large egg, 2 teaspoons of maple syrup, and 1 cup of pumpkin puree, stirring well until all ingredients are fully incorporated and the mixture is smooth. 
  • In a separate small bowl, or directly on a clean piece of parchment paper for convenience, combine the 2 cups of all-purpose flour, 1 teaspoon of ground cinnamon, 1/4 teaspoon of kosher salt, and 1 teaspoon of baking powder. Whisk or stir these dry ingredients until they are thoroughly combined. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix the batter. Finally, gently fold in the 1 cup of chocolate chips, distributing them evenly throughout the pumpkin batter.

Immediately after taking the warm bars out of the oven, use the back of a spoon or a toothpick to gently smooth out any melty chocolate chips on top. This creates beautiful little pools of shiny, gooey chocolate that look as amazing as they taste!
