Why Bake with Coffee? The Magic of Coffee in Desserts

Beyond simply adding a coffee flavor, incorporating coffee or espresso into desserts does so much more. It’s a culinary secret weapon that enhances other flavors, particularly chocolate, making them taste richer and more profound without necessarily tasting overtly like coffee itself. Coffee can provide a subtle bitterness that perfectly balances the sweetness of sugars, preventing desserts from being cloyingly sweet. It also introduces a wonderful aroma that can elevate the entire sensory experience of a dessert. From a deep, robust espresso in a cheesecake to a delicate coffee infusion in a cookie, the possibilities are endless for creating complex, layered flavors that captivate the palate.

Tips for Baking with Coffee and Espresso

  • **Choose Your Coffee Wisely:** The type of coffee you use will significantly impact the flavor. Instant espresso powder provides a strong, concentrated coffee flavor without adding extra liquid, making it ideal for batters and frostings where consistency is key. Brewed coffee or cold brew can be used for a more diluted flavor or when liquid content isn’t an issue.
  • **Enhance Chocolate:** Always remember that coffee is a fantastic partner to chocolate. A small amount of espresso powder can intensify the chocolate flavor in cakes, brownies, and cookies without making them taste like coffee.
  • **Adjust to Taste:** Coffee strength varies. Start with the recommended amount in a recipe, but don’t hesitate to adjust slightly to your personal preference. For a stronger coffee kick, you can increase the amount of instant espresso or use a stronger brew.
  • **Temperature Matters:** Ensure any brewed coffee added to batters is cooled to room temperature unless the recipe specifically calls for warm liquid. This prevents curdling of eggs or melting of butter.
  • **Freshness Counts:** Use fresh coffee or espresso powder for the best flavor. Stale coffee can impart an off-taste.

  • 1 tsp instant espresso

  • 1 cup unsalted butter, at room temperature

  • 3 cup confectioners sugar

  • 2 tsp water

  • 1 tsp instant espresso

  • 1 tsp milk , or cream

  • chocolate covered espresso beans, optional

Equipment

  • Stand or Hand mixer

Instructions

Make the Cupcakes

  • Preheat your oven to 350° F (175°C). In the bowl of either a hand mixer or a stand mixer fitted with the paddle attachment, combine the 2 cups of all-purpose flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/4 tsp kosher salt, 1/4 tsp baking soda, and 1/2 tsp baking powder. Mix these dry ingredients together on low speed until just combined.
  • Gradually add the 2 large eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Following this, pour in the 1/2 cup of vegetable oil. Continue mixing on low to medium speed for approximately 30 seconds, until all ingredients are well combined and the batter is smooth.
  • Slowly pour in the 1/2 cup of milk. In a separate measuring cup, combine the 1/4 cup of warm brewed coffee with 1 tsp of instant espresso, stirring until the espresso is dissolved. Gradually add this coffee mixture to the batter, mixing on low speed until everything is just combined and no dry streaks remain. Be careful not to overmix.
  • Line a 12-cup cupcake tin with paper liners. Fill each liner only two-thirds of the way full to allow room for rising. Bake for 20-22 minutes, or until the cupcakes are beautifully puffed up, golden, and springy to the touch in the center when gently pressed. Allow them to cool completely on a wire rack before frosting.

Make the buttercream

  • In the bowl of a hand mixer or a stand mixer fitted with the paddle attachment, combine the 1 cup of softened unsalted butter and 3 cups of confectioners’ sugar. Mix on low to medium speed for about 2 minutes, until the mixture becomes creamy and smooth. Scrape down the sides of the bowl as needed.
  • In a small separate bowl, combine the 2 tsp of water with 1 tsp of instant espresso powder, stirring until the espresso is fully dissolved. Turn your mixer to low speed and gradually add this dissolved coffee mixture, along with 1 tsp of milk (or cream), to the buttercream. Increase the speed to medium and mix for 1-2 minutes until the buttercream is delightfully creamy, light, and fluffy.
  • Once the cupcakes are completely cool, frost them generously with the prepared espresso buttercream. For an extra touch of elegance and flavor, top with chocolate-covered espresso beans, if desired. Serve immediately and enjoy!

Notes

These delightful espresso cupcakes do not require refrigeration. For optimal freshness, store them in an airtight container at room temperature for up to 3 days.

To quickly make brewed coffee using instant coffee, simply combine 1/2 teaspoon of instant coffee granules with 2 ounces (approximately 1/4 cup) of hot water. Stir until dissolved.

It’s crucial not to overfill your cupcake liners. For perfect domes and to prevent overflow, fill each liner only two-thirds of the way. This allows ample room for the cupcakes to rise beautifully as they bake.
