  • In a medium sized bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press the crumbs firmly into a 9″ tart pan (see notes below for other options like mini tarts or bars). Bake for 8-10 minutes until the crust is golden brown and fragrant. Remove from oven and allow to cool completely on a wire rack.
  • Meanwhile, prepare the filling. In a separate bowl, whisk together the egg yolks, sweetened condensed milk, half-and-half, lime zest, and key lime (or regular lime) juice until thoroughly combined and smooth. Pour this luscious mixture into the cooled graham cracker crust. Lower the oven temperature to 350°F (175°C) and bake for 8-10 minutes, or until the edges are set and the center has a slight jiggle.
